Feta Cheese and Bacon Stuffed Chicken Breasts


8 tablespoons olive oil
2 teaspoons lemon juice
4 cloves crushed garlic
1 tablespoon dried oregano
a little bit of rosemary
salt and pepper to taste
4 skinless, boneless chicken breasts
feta cheese, either crumbles or slices
4 slices bacon, cooked

Marinade the chicken beforehand, for however long you want but at least let it sit for 1 hour in the refridgerator before cooking. To make up the marniade you need to put in a small bowl the oil, lemon juice, garlic, oregano, rosemary, salt and pepper. Take each chicken breast and trim the fat off, then butterfly them down the center but don't cut all the way through. Get out two pieces of plastic wrap and put 1 chicken breast between the two. Pound out the chicken thin but not too thin to make sure you don't tear it. Place it into a gallon ziplock bag/ container and do the same thing for the rest of the chicken breasts. Pour the marinade over the chicken, making sure each breast is coated and seal/cover, then place into the fridge.

About 1 hour before dinner, get out a 9x13, and dump the entire marinade/chicken contents into the pan, take each chicken breast and straighten out, placing 1 piece of bacon and feta cheese on half, take the bare half and fold over on top of the cheese/bacon- you can secure with toothpicks or leave as is. Do this for the remaining chicken breasts.
Place into a 350 degree oven for 50 minutes.








This is the recipe that I wanted to start my whole blog with, and then dinner came, my parents were visiting, and it smelled so good- so good that I completely forgot to take a picture of it! bummer. So we were having our best friend Jamin over last night and I knew I had to make this, not only because I could eat this every night! But I have been dieing to share this with you guys!! I promise you will love this, please, please try it and you'll fall in love too. It may seem intimidating, but it doesn't take that long and it's easy. I've made it, where I wrapped each breast in a piece of raw bacon on the outside before cooking, and then this time I didn't. Mainly because it doesn't really add any flavor but if you want to impress people, it looks pretty fancy with it on the outside of it. If you've never had or cooked with Feta cheese, it is so yummy! What's great about Feta cheese is that it melts, but still holds it's shape so all the cheese stays inside the chicken, it will never melt out of it like most all other cheeses!
While Israel slept, Emry and I went to work in the kitchen, as you can seen above, he peeled the garlic for me, pressed it, stir/shook the marinade, and pounded out the chicken. A whole lotta love went into this chicken for Jamin!
